Preparation Time - 15 mins
Cook Time - 45 mins

Ingredients

  1. 2 tablespoon butter
  2. 1 onion sliced thin and long
  3. 1 spring onion
  4. 1 large or 2 medium zucchini sliced thinly
  5. 6-8 pcs mushroom sliced
  6. 1/4 cup american sweet corn
  7. 1 teaspoon basil
  8. 1 teaspoon oregano
  9. 1/2 teaspoon pepper and salt each
  10. 2 eggs beaten
  11. 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat the oven at 200 degrees. Heat the butter in a large pan over medium heat. Add onions, spring onion, mushroom, zucchini, sweet corn (pro tip: microwave the frozen corn for 1 minute before you add it) and saute until the veggies are soft. It took me 10 mins. Remove from the gas.
  2.  Cool the mixture - add salt, pepper, oregano, basil and mix well.
  3. In a pie dish smear some oil and place the parchment paper and transfer the above mix.
  4. Add the beaten egg with mozzarella and mix with 1/2 of the grated cheese. Arrange the top so that the zucchini slices lay flat.
  5. Now garnish with the rest of the cheese and place a foil paper on the dish and bake for 15 minutes at 200 degrees.
  6. Then remove the foil and bake for further 5-10 mins till the pie turns golden sizzling brown. Cut into slices and serve.
